Ingredients

  • 1 can of black beans, drained and rinsed
  • 1/2 cup of cooked quinoa
  • 1/2 cup of rolled oats
  • 1/4 cup of chopped onion
  • 1/4 cup of chopped mushrooms
  • 1/4 cup of chopped bell pepper
  • 1 tablespoon of soy sauce
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of garlic powder
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of salt
  • 4 whole wheat burger buns
  • 4 lettuce leaves
  • 4 slices of tomato
  • 4 slices of avocado

Instructions

  • Preheat the oven to 375°F.
  • In a large bowl, mash the black beans with a fork or potato masher.
  • Add the quinoa, oats, onion, mushrooms, bell pepper, soy sauce, smoked paprika, garlic powder, black pepper, and salt. Mix well.
  • Form the mixture into 4 patties and place them on a baking sheet lined with parchment paper.
  • Bake for 20-25 minutes, flipping the patties halfway through.
  • Assemble the burgers by placing a patty on a bun, followed by a lettuce leaf, a slice of tomato, and a slice of avocado.
  • Serve and enjoy!
