Ingredients

  • 2 cups jasmine sticky rice
  • 1 cup coconut milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 ripe mango, sliced
  • 1 tablespoon sesame seeds, toasted

Instructions

  • Rinse the jasmine sticky rice under cold water until the water runs clear.
  • Soak the rice in water for at least 4 hours or overnight.
  • Drain the rice and place it in a steamer basket lined with cheesecloth.
  • Steam the rice over high heat for 30 minutes or until tender.
  • While the rice is steaming, combine the coconut milk, sugar, and salt in a saucepan.
  • Heat the mixture over medium heat until the sugar has dissolved.
  • Remove the rice from the steamer and transfer it to a bowl.
  • Pour the coconut milk mixture over the rice and stir to combine.
  • Cover the bowl with a clean kitchen towel and let the rice sit for 10 minutes.
  • Fluff the rice with a fork and serve it with sliced mango and toasted sesame seeds.
