Ingredients
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped onion
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 cup chopped kale
- 1 cup cooked quinoa
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large pot, heat some olive oil over medium heat.
- Add the chopped carrots, celery, and onion to the pot and sauté until they start to soften.
