Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8 oz) packages cream cheese, softened
  • 1 1/4 cups sugar
  • 1 tsp vanilla extract
  • 4 large eggs
  • 1/4 cup heavy cream
  • Purple, blue, and pink food coloring

Instructions

  • Preheat oven to 350°F.
  • In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan.
  • In a large bowl, beat cream cheese until smooth. Gradually add sugar and vanilla extract, beating until well combined.
  • Add eggs one at a time, beating well after each addition. Stir in heavy cream.
  • Divide batter evenly into three bowls. Add a few drops of purple food coloring to one bowl, blue to another, and pink to the third. Stir until colors are well combined.
  • Spoon dollops of each color batter onto the crust in the springform pan. Use a knife to swirl the colors together, creating a galaxy-inspired pattern.
  • Bake for 45-50 minutes, or until the edges are set and the center is slightly jiggly.
  • Turn off the oven and let the cheesecake cool inside for 30 minutes.
  • Remove from oven and let cool completely at room temperature. Chill in the refrigerator for at least 4 hours before serving.
