Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 eggs
  • 1/2 cup cold brew coffee
  • 1 tsp vanilla extract
  • 1/2 cup caramel sauce

Instructions

  • Preheat oven to 325°F.
  • In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan.
  • In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, beating well after each addition.
  • Stir in cold brew coffee and vanilla extract.
  • Pour mixture over crust in prepared pan.
  • Drizzle caramel sauce over cheesecake and swirl with a knife.
  • Bake for 45-50 minutes, or until center is almost set.
  • Cool on a wire rack for 10 minutes. Run a knife around the edge of the pan to loosen cheesecake. Cool for an additional hour.
  • Refrigerate for at least 4 hours before serving.
