Ingredients
- 1 lb. boneless beef or lamb, cut into small pieces
- 2 cups basmati rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 carrot, chopped
- 1 cup frozen peas
- 2 tbsp. vegetable oil
- 1 tsp. ground cumin
- 1 tsp. ground coriander
- 1 tsp. ground turmeric
- 1 tsp. ground cinnamon
- 1 tsp. ground cardamom
- 1 tsp. salt
- 4 cups water
Instructions
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
- Add the chopped onion and sauté until softened and lightly browned, about 5 minutes.
- Add the minced garlic and sauté for another minute.
- Add the chopped bell pepper and carrot, and sauté for another 5 minutes.
- Add the meat and sauté until browned on all sides, about 10 minutes.
- Add the ground cumin, coriander, turmeric, cinnamon, cardamom, and salt, and stir to coat the meat and vegetables.
- Add the basmati rice and stir to coat with the spice mixture.
- Add the frozen peas and water, and stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot.
- Simmer for 20-25 minutes, or until the rice is tender and the liquid has been absorbed.
- Fluff the rice with a fork and serve hot.
