Ingredients

  • 1 lb. boneless beef or lamb, cut into small pieces
  • 2 cups basmati rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 carrot, chopped
  • 1 cup frozen peas
  • 2 tbsp. vegetable oil
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander
  • 1 tsp. ground turmeric
  • 1 tsp. ground cinnamon
  • 1 tsp. ground cardamom
  • 1 tsp. salt
  • 4 cups water

Instructions

  • In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
  • Add the chopped onion and sauté until softened and lightly browned, about 5 minutes.
  • Add the minced garlic and sauté for another minute.
  • Add the chopped bell pepper and carrot, and sauté for another 5 minutes.
  • Add the meat and sauté until browned on all sides, about 10 minutes.
  • Add the ground cumin, coriander, turmeric, cinnamon, cardamom, and salt, and stir to coat the meat and vegetables.
  • Add the basmati rice and stir to coat with the spice mixture.
  • Add the frozen peas and water, and stir to combine.
  • Bring the mixture to a boil, then reduce the heat to low and cover the pot.
  • Simmer for 20-25 minutes, or until the rice is tender and the liquid has been absorbed.
  • Fluff the rice with a fork and serve hot.
