Ingredients
- 1 lb. shrimp, peeled and deveined
- 2 medium zucchinis, sliced
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 2 cloves garlic, minced
- 1 tsp. paprika
- 1 tsp. cumin
- 1/2 tsp. chili powder
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 2 tbsp. olive oil
Instructions
- In a large skillet, heat olive oil over medium-high heat.
- Add garlic and cook until fragrant, about 1 minute.
- Add shrimp and cook until pink, about 2-3 minutes per side.
- Remove shrimp from skillet and set aside.
- Add zucchini, bell pepper, and onion to the skillet and cook until tender, about 5-7 minutes.
- Add paprika, cumin, chili powder, salt, and black pepper to the skillet and stir to combine.
- Return shrimp to the skillet and stir to combine with the vegetables.
- Cook for an additional 2-3 minutes, until everything is heated through.
- Serve hot and enjoy!
