Ingredients

  • 1 lb. shrimp, peeled and deveined
  • 2 medium zucchinis, sliced
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp. paprika
  • 1 tsp. cumin
  • 1/2 tsp. chili powder
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 2 tbsp. olive oil

Instructions

  • In a large skillet, heat olive oil over medium-high heat.
  • Add garlic and cook until fragrant, about 1 minute.
  • Add shrimp and cook until pink, about 2-3 minutes per side.
  • Remove shrimp from skillet and set aside.
  • Add zucchini, bell pepper, and onion to the skillet and cook until tender, about 5-7 minutes.
  • Add paprika, cumin, chili powder, salt, and black pepper to the skillet and stir to combine.
  • Return shrimp to the skillet and stir to combine with the vegetables.
  • Cook for an additional 2-3 minutes, until everything is heated through.
