Ingredients
- 2 cups basmati rice
- 1 lb lamb, cut into cubes
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon turmeric
- 1 teaspoon cinnamon
- 1 teaspoon cardamom
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 4 cups chicken broth
- 1/2 cup raisins
- 1/2 cup slivered almonds
- Fresh cilantro, for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
- Add the lamb cubes to the pot and cook until browned on all sides.
- Add the cumin, coriander, turmeric, cinnamon, cardamom, salt, black pepper, and cayenne pepper to the pot. Stir well to coat the lamb and onions with the spices.
- Add the basmati rice to the pot and stir to combine with the lamb and spices.
- Pour in the chicken broth and bring to a boil. Reduce heat to low, cover the pot, and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, heat a small skillet over medium heat. Add the slivered almonds and toast until golden brown, stirring frequently. Remove from heat and set aside.
- Once the rice is cooked, fluff it with a fork and stir in the raisins and toasted almonds.
- Garnish with fresh cilantro and serve hot.
