Ingredients

  • 2 cups basmati rice
  • 1 lb lamb, cut into cubes
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon turmeric
  • 1 teaspoon cinnamon
  • 1 teaspoon cardamom
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 4 cups chicken broth
  • 1/2 cup raisins
  • 1/2 cup slivered almonds
  • Fresh cilantro, for garnish

Instructions

  • In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
  • Add the lamb cubes to the pot and cook until browned on all sides.
  • Add the cumin, coriander, turmeric, cinnamon, cardamom, salt, black pepper, and cayenne pepper to the pot. Stir well to coat the lamb and onions with the spices.
  • Add the basmati rice to the pot and stir to combine with the lamb and spices.
  • Pour in the chicken broth and bring to a boil. Reduce heat to low, cover the pot, and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
  • While the rice is cooking, heat a small skillet over medium heat. Add the slivered almonds and toast until golden brown, stirring frequently. Remove from heat and set aside.
  • Once the rice is cooked, fluff it with a fork and stir in the raisins and toasted almonds.
  • Garnish with fresh cilantro and serve hot.
