Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup tomato sauce
- 1/4 cup water
- 1 head of cauliflower, riced
- 1 avocado, sliced
- 1 lime, cut into wedges
- Fresh cilantro, chopped
Instructions
- In a large skillet, heat the olive oil over medium-high heat.
- Add the ground beef and cook until browned, breaking it up with a wooden spoon as it cooks.
- Add the onion, garlic, and bell peppers to the skillet and cook until the vegetables are tender.
- Stir in the chili powder, cumin, paprika, salt, and black pepper.
- Add the tomato sauce and water to the skillet and stir to combine.
- Reduce the heat to low and let the mixture simmer for 10-15 minutes.
- While the beef mixture is simmering, prepare the cauliflower rice by pulsing the cauliflower florets in a food processor until they are the size of rice grains.
- Divide the cauliflower rice among four bowls and top with the beef mixture.
- Garnish each bowl with sliced avocado, a squeeze of lime juice, and chopped cilantro.
