Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup tomato sauce
  • 1/4 cup water
  • 1 head of cauliflower, riced
  • 1 avocado, sliced
  • 1 lime, cut into wedges
  • Fresh cilantro, chopped

Instructions

  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the ground beef and cook until browned, breaking it up with a wooden spoon as it cooks.
  • Add the onion, garlic, and bell peppers to the skillet and cook until the vegetables are tender.
  • Stir in the chili powder, cumin, paprika, salt, and black pepper.
  • Add the tomato sauce and water to the skillet and stir to combine.
  • Reduce the heat to low and let the mixture simmer for 10-15 minutes.
  • While the beef mixture is simmering, prepare the cauliflower rice by pulsing the cauliflower florets in a food processor until they are the size of rice grains.
