Ingredients

  • 2 nori sheets
  • 1 cup cauliflower rice
  • 1/2 avocado, sliced
  • 1/2 cucumber, julienned
  • 1/4 red bell pepper, julienned
  • 1/4 carrot, julienned
  • 1/4 cup coconut aminos
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1/2 tsp ginger, grated
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

  • In a small bowl, mix together the coconut aminos, rice vinegar, sesame oil, ginger, salt, and pepper to make the sauce.
  • Lay a nori sheet on a bamboo sushi mat, shiny side down.
  • Spread half of the cauliflower rice evenly over the nori sheet, leaving a 1-inch border at the top.
  • Layer the avocado, cucumber, bell pepper, and carrot on top of the cauliflower rice.
  • Using the bamboo mat, roll the sushi tightly, starting from the bottom and rolling towards the top.
  • Slice the sushi roll into 6-8 pieces using a sharp knife.
  • Repeat with the second nori sheet and remaining ingredients.
  • Serve the sushi rolls with the dipping sauce and enjoy!
