Ingredients
- 2 nori sheets
- 1 cup cauliflower rice
- 1/2 avocado, sliced
- 1/2 cucumber, julienned
- 1/4 red bell pepper, julienned
- 1/4 carrot, julienned
- 1/4 cup coconut aminos
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1/2 tsp ginger, grated
- 1/4 tsp salt
- 1/4 tsp pepper
Instructions
- In a small bowl, mix together the coconut aminos, rice vinegar, sesame oil, ginger, salt, and pepper to make the sauce.
- Lay a nori sheet on a bamboo sushi mat, shiny side down.
- Spread half of the cauliflower rice evenly over the nori sheet, leaving a 1-inch border at the top.
- Layer the avocado, cucumber, bell pepper, and carrot on top of the cauliflower rice.
- Using the bamboo mat, roll the sushi tightly, starting from the bottom and rolling towards the top.
- Slice the sushi roll into 6-8 pieces using a sharp knife.
- Repeat with the second nori sheet and remaining ingredients.
- Serve the sushi rolls with the dipping sauce and enjoy!
