Ingredients
- 1 cup almonds
- 1 cup cashews
- 1 cup unsweetened shredded coconut
- 1/2 cup almond butter
- 1/2 cup coconut oil
- 1/4 cup honey
- 1/4 cup chia seeds
- 1/4 cup hemp hearts
- 1 tsp vanilla extract
- 1/2 tsp sea salt
Instructions
- Preheat oven to 350°F.
- Spread almonds and cashews on a baking sheet and toast in the oven for 8-10 minutes, until lightly golden.
- In a large bowl, combine toasted almonds and cashews with shredded coconut, almond butter, coconut oil, honey, chia seeds, hemp hearts, vanilla extract, and sea salt. Mix well.
- Line an 8x8 inch baking dish with parchment paper. Press the mixture firmly into the dish.
- Bake for 20-25 minutes, until golden brown.
- Let cool completely before cutting into bars.
- Store in an airtight container in the refrigerator for up to 2 weeks.
