Ingredients

  • 1 cup almonds
  • 1 cup cashews
  • 1 cup unsweetened shredded coconut
  • 1/2 cup almond butter
  • 1/2 cup coconut oil
  • 1/4 cup honey
  • 1/4 cup chia seeds
  • 1/4 cup hemp hearts
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt

Instructions

  • Preheat oven to 350°F.
  • Spread almonds and cashews on a baking sheet and toast in the oven for 8-10 minutes, until lightly golden.
  • In a large bowl, combine toasted almonds and cashews with shredded coconut, almond butter, coconut oil, honey, chia seeds, hemp hearts, vanilla extract, and sea salt. Mix well.
  • Line an 8x8 inch baking dish with parchment paper. Press the mixture firmly into the dish.
  • Bake for 20-25 minutes, until golden brown.
  • Let cool completely before cutting into bars.
  • Store in an airtight container in the refrigerator for up to 2 weeks.
