- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp dried oregano
- 1 tbsp dried thyme
- 1 tsp cayenne pepper
- 4 medium sweet potatoes, peeled and cubed
- 2 tbsp coconut oil
- Salt and pepper, to taste
Instructions
- In a large bowl, whisk together the olive oil, apple cider vinegar, paprika, garlic powder, onion powder, oregano, thyme, and cayenne pepper.
- Add the chicken breasts to the bowl and toss to coat in the marinade. Cover and refrigerate for at least 30 minutes, or up to 24 hours.
- Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard any excess marinade.
- Grill the chicken for 6-8 minutes per side, or until cooked through and no longer pink in the middle.
- Meanwhile, preheat the oven to 400°F. Line a baking sheet with parchment paper.
- In a large bowl, toss the sweet potatoes with the coconut oil, salt, and pepper. Spread the sweet potatoes out in a single layer on the prepared baking sheet.
