About this recipe

This Whole30-friendly dish offers a perfect blend of spice and sweetness. The chicken is marinated in a flavorful mix of herbs and spices, then grilled to juicy perfection. Complemented by tender, caramelized sweet potatoes, this meal is both satisfying and nutritious.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 teaspoon cayenne pepper
  • 4 medium sweet potatoes, peeled and cubed
  • 2 tablespoons coconut oil
  • Salt and pepper, to taste

Directions

  1. 1

Whisk together olive oil, apple cider vinegar, paprika, garlic powder, onion powder, oregano, thyme, and cayenne pepper in a large bowl.

  2. 2

Add the chicken to the marinade, cover, and refrigerate for at least 30 minutes.

  3. 3

Preheat the grill to medium-high heat. Remove chicken from marinade.

  4. 4

Grill chicken for 6-8 minutes per side, until cooked through.

  5. 5

Preheat oven to 400°F. Line a baking sheet with parchment paper.

  6. 6

Toss sweet potatoes with coconut oil, salt, and pepper. Spread on the baking sheet.

  7. 7

Roast sweet potatoes for 25-30 minutes, until tender and caramelized.

  8. 8

Serve grilled chicken with roasted sweet potatoes.

Chef's tip

Marinating the chicken longer enhances the flavor. Adjust cayenne for preferred spice level.
