Ingredients
- 2 cups quinoa
- 4 cups vegetable broth
- 1 cup diced tomatoes
- 1 cup chopped spinach
- 1 cup diced bell peppers
- 1 cup diced onions
- 1 cup cooked black beans
- 1 cup corn kernels
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onions and bell peppers and cook until softened, about 5 minutes.
- Add the quinoa and vegetable broth to the pot and bring to a boil.
- Reduce heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.
- Stir in the diced tomatoes, spinach, black beans, corn kernels, cumin, paprika, garlic powder, salt, and pepper.
- Cook for an additional 5 minutes, or until the spinach is wilted and the flavors are well combined.
- Remove from heat and let cool slightly before serving.
