Ingredients

  • 2 cups quinoa
  • 4 cups vegetable broth
  • 1 cup diced tomatoes
  • 1 cup chopped spinach
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup cooked black beans
  • 1 cup corn kernels
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  • In a large pot, heat the olive oil over medium heat.
  • Add the onions and bell peppers and cook until softened, about 5 minutes.
  • Add the quinoa and vegetable broth to the pot and bring to a boil.
  • Reduce heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed.
  • Stir in the diced tomatoes, spinach, black beans, corn kernels, cumin, paprika, garlic powder, salt, and pepper.
  • Cook for an additional 5 minutes, or until the spinach is wilted and the flavors are well combined.
  • Remove from heat and let cool slightly before serving.
