Ingredients
- 1 cup quinoa
- 2 cups water
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1/2 red onion, diced
- 1 avocado, diced
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- 1. Rinse quinoa and add to a pot with 2 cups of water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until water is absorbed and quinoa is tender.
- 2. In a large bowl, combine cooked quinoa, black beans, bell peppers, red onion, avocado, and cilantro.
