Ingredients

  • 2 cups chicken broth
  • 1 cup water
  • 1 package ramen noodles
  • 1/2 cup sliced mushrooms
  • 1/4 cup sliced green onions
  • 1/4 cup shredded carrots
  • 1/4 cup diced tofu
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon grated ginger
  • Salt and pepper to taste

Instructions

  • In a large pot, bring the chicken broth and water to a boil.
  • Add the ramen noodles and cook according to package instructions.
  • While the noodles are cooking, heat a small skillet over medium heat.
  • Add the mushrooms, green onions, carrots, tofu, soy sauce, sesame oil, garlic, and ginger.
  • Cook until the vegetables are tender, about 5 minutes.
  • Once the noodles are cooked, drain them and return them to the pot.
  • Add the cooked vegetables to the pot and stir to combine.
  • Season with salt and pepper to taste.
