Ingredients

  • 1 small watermelon
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro

Instructions

  • Cut the watermelon into 'wings' by slicing off the rind and cutting the flesh into triangular shapes.
  • In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes.
  • Place the watermelon wings in a large bowl and pour the marinade over them. Toss to coat evenly.
  • Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 4 hours.
  • Preheat the grill to medium-high heat.
  • Remove the watermelon wings from the marinade and discard the remaining marinade.
  • Grill the watermelon wings for 2-3 minutes per side, or until lightly charred and heated through.
