Ingredients
- 1 small watermelon
- 1/2 cup soy sauce
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon grated ginger
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
Instructions
- Cut the watermelon into 'wings' by slicing off the rind and cutting the flesh into triangular shapes.
- In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes.
- Place the watermelon wings in a large bowl and pour the marinade over them. Toss to coat evenly.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 4 hours.
- Preheat the grill to medium-high heat.
- Remove the watermelon wings from the marinade and discard the remaining marinade.
- Grill the watermelon wings for 2-3 minutes per side, or until lightly charred and heated through.
- Serve the watermelon wings hot, garnished with chopped green onions and cilantro.
