Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon brown sugar
  • 1/2 teaspoon black pepper
  • 2 baguettes
  • 1/4 cup mayonnaise
  • 1/4 cup pickled carrots and daikon
  • 1/4 cup cucumber, thinly sliced
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup fresh mint leaves
  • 1/4 cup jalapeno, thinly sliced
  • 1/4 cup sriracha sauce

Instructions

  • In a bowl, combine soy sauce, fish sauce, lime juice, minced garlic, brown sugar, and black pepper. Mix well.
  • Add chicken breasts to the marinade and let them marinate for at least 30 minutes.
  • Preheat grill or grill pan over medium-high heat.
  • Grill the chicken breasts for about 6-8 minutes per side, or until cooked through.
  • Remove the chicken from the grill and let it rest for a few minutes before slicing.
  • Slice the baguettes in half lengthwise and spread mayonnaise on both sides.
  • Layer pickled carrots and daikon, cucumber slices, cilantro leaves, mint leaves, and jalapeno slices on the bottom half of the baguettes.
  • Place sliced chicken on top of the vegetables.
  • Drizzle sriracha sauce over the chicken.
  • Close the baguettes and press them gently to flatten the sandwich.
  • Serve immediately and enjoy!
