- 2 boneless, skinless chicken breasts
- 1/4 cup soy sauce
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 tablespoon brown sugar
- 1/2 teaspoon black pepper
- 2 baguettes
- 1/4 cup mayonnaise
- 1/4 cup pickled carrots and daikon
- 1/4 cup cucumber, thinly sliced
- 1/4 cup fresh cilantro leaves
- 1/4 cup fresh mint leaves
- 1/4 cup jalapeno, thinly sliced
- 1/4 cup sriracha sauce
Instructions
- In a bowl, combine soy sauce, fish sauce, lime juice, minced garlic, brown sugar, and black pepper. Mix well.
- Add chicken breasts to the marinade and let them marinate for at least 30 minutes.
- Preheat grill or grill pan over medium-high heat.
- Grill the chicken breasts for about 6-8 minutes per side, or until cooked through.
- Remove the chicken from the grill and let it rest for a few minutes before slicing.
- Slice the baguettes in half lengthwise and spread mayonnaise on both sides.
- Layer pickled carrots and daikon, cucumber slices, cilantro leaves, mint leaves, and jalapeno slices on the bottom half of the baguettes.
- Place sliced chicken on top of the vegetables.
- Drizzle sriracha sauce over the chicken.
- Close the baguettes and press them gently to flatten the sandwich.
- Serve immediately and enjoy!
