- 1 package of rice cakes
- 1 block of firm tofu, cubed
- 1 cup of sliced carrots
- 1 cup of sliced bell peppers
- 1 cup of sliced mushrooms
- 1/2 cup of gochujang (Korean chili paste)
- 1/4 cup of soy sauce
- 2 tablespoons of sugar
- 4 cups of vegetable broth
- 2 tablespoons of vegetable oil
- Sesame seeds and green onions for garnish
Instructions
- 1. In a large pan, heat vegetable oil over medium heat.
- 2. Add tofu and cook until golden brown, about 5 minutes.
- 3. Add carrots, bell peppers, and mushrooms to the pan and cook until slightly softened.
- 4. In a small bowl, mix together gochujang, soy sauce, sugar, and vegetable broth.
- 5. Add rice cakes and the sauce mixture to the pan. Stir well to combine.
- 6. Cover and simmer for 10-15 minutes, or until the rice cakes are tender.
- 7. Garnish with sesame seeds and green onions before serving.
