Ingredients

  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 carrot, grated
  • 1 can of crushed tomatoes
  • 1 can of tomato sauce
  • 1 tablespoon of tomato paste
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • 1/2 teaspoon of dried thyme
  • 1/2 teaspoon of dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions

  • In a large pot, heat the olive oil over medium heat.
  • Add the onion and garlic to the pot and sauté until they become translucent.
  • Add the bell pepper, zucchini, and carrot to the pot and cook until they start to soften.
  • Stir in the crushed tomatoes, tomato sauce, and tomato paste.
  • Add the dried basil, dried oregano, dried thyme, dried rosemary, salt, and pepper to the pot.
  • Simmer the sauce for at least 30 minutes to allow the flavors to meld together.
  • Serve the vegetarian spaghetti sauce over cooked pasta of your choice.
