Ingredients
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 carrot, grated
- 1 can of crushed tomatoes
- 1 can of tomato sauce
- 1 tablespoon of tomato paste
- 1 teaspoon of dried basil
- 1 teaspoon of dried oregano
- 1/2 teaspoon of dried thyme
- 1/2 teaspoon of dried rosemary
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic to the pot and sauté until they become translucent.
- Add the bell pepper, zucchini, and carrot to the pot and cook until they start to soften.
- Stir in the crushed tomatoes, tomato sauce, and tomato paste.
- Add the dried basil, dried oregano, dried thyme, dried rosemary, salt, and pepper to the pot.
- Simmer the sauce for at least 30 minutes to allow the flavors to meld together.
- Serve the vegetarian spaghetti sauce over cooked pasta of your choice.
