Ingredients
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 carrots, diced
- 2 celery stalks, chopped
- 1 zucchini, sliced
- 1 cup of green beans, trimmed and cut into bite-sized pieces
- 1 can of diced tomatoes
- 4 cups of vegetable broth
- 1 teaspoon of dried thyme
- 1 teaspoon of dried oregano
- Salt and pepper to taste
Instructions
- In a large pot, heat some olive oil over medium heat.
- Add the onion and garlic and sauté until fragrant.
- Add the carrots, celery, zucchini, and green beans. Cook for a few minutes until slightly softened.
