Ingredients
- 1 package of vegetarian shrimp
- 1 can of hearts of palm
- 1 can of artichoke hearts
- 1 red bell pepper
- 1 yellow onion
- 2 cloves of garlic
- 1 tablespoon of olive oil
- 1 teaspoon of paprika
- 1 teaspoon of dried thyme
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 cup of vegetable broth
- 1/4 cup of white wine
- 1/4 cup of chopped parsley
Instructions
- 1. Preheat the oven to 375°F.
- 2. Drain and rinse the vegetarian shrimp, hearts of palm, and artichoke hearts.
- 3. Cut the red bell pepper and yellow onion into thin slices.
- 4. Mince the garlic.
- 5. In a large skillet, heat the olive oil over medium heat.
- 6. Add the red bell pepper and yellow onion to the skillet and sauté for 5 minutes.
- 7. Add the garlic, paprika, thyme, salt, and black pepper to the skillet and sauté for 1 minute.
- 8. Add the vegetarian shrimp, hearts of palm, artichoke hearts, vegetable broth, and white wine to the skillet and stir to combine.
- 9. Transfer the mixture to a baking dish and bake for 20 minutes.
- 10. Sprinkle chopped parsley over the top of the dish before serving.
