  • 1 red bell pepper
  • 1 yellow onion
  • 2 cloves of garlic
  • 1 tablespoon of olive oil
  • 1 teaspoon of paprika
  • 1 teaspoon of dried thyme
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of vegetable broth
  • 1/4 cup of white wine
  • 1/4 cup of chopped parsley

Instructions

  • 1. Preheat the oven to 375°F.
  • 2. Drain and rinse the vegetarian shrimp, hearts of palm, and artichoke hearts.
  • 3. Cut the red bell pepper and yellow onion into thin slices.
  • 4. Mince the garlic.
  • 5. In a large skillet, heat the olive oil over medium heat.
  • 6. Add the red bell pepper and yellow onion to the skillet and sauté for 5 minutes.
  • 7. Add the garlic, paprika, thyme, salt, and black pepper to the skillet and sauté for 1 minute.
  • 8. Add the vegetarian shrimp, hearts of palm, artichoke hearts, vegetable broth, and white wine to the skillet and stir to combine.
  • 9. Transfer the mixture to a baking dish and bake for 20 minutes.
