Ingredients

  • 2 cups basmati rice
  • 1 can chickpeas, drained and rinsed
  • 1 large onion, thinly sliced
  • 2 carrots, diced
  • 1 bell pepper, diced
  • 1 cup frozen peas
  • 1/4 cup raisins
  • 1/4 cup slivered almonds
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  • In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  • Add carrots, bell pepper, and spices. Cook for 5 minutes, stirring occasionally.
  • Add rice, chickpeas, peas, raisins, almonds, and vegetable broth. Bring to a boil, then reduce heat to low and cover. Cook for 20 minutes or until rice is tender.
  • Fluff rice with a fork, season with salt and pepper to taste. Serve hot and enjoy!
