Ingredients
- 2 cups basmati rice
- 1 can chickpeas, drained and rinsed
- 1 large onion, thinly sliced
- 2 carrots, diced
- 1 bell pepper, diced
- 1 cup frozen peas
- 1/4 cup raisins
- 1/4 cup slivered almonds
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp turmeric
- 1/2 tsp cinnamon
- 1/4 tsp cayenne pepper
- 4 cups vegetable broth
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
- Add carrots, bell pepper, and spices. Cook for 5 minutes, stirring occasionally.
- Add rice, chickpeas, peas, raisins, almonds, and vegetable broth. Bring to a boil, then reduce heat to low and cover. Cook for 20 minutes or until rice is tender.
- Fluff rice with a fork, season with salt and pepper to taste. Serve hot and enjoy!
