Ingredients
- 2 cups vegetable broth
- 2 cups water
- 1 cup sliced mushrooms
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped bell peppers
- 1 cup chopped onions
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon ginger powder
- 1 teaspoon turmeric powder
- 1 package of your favorite noodles
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable broth and water over medium heat.
- Add the mushrooms, carrots, celery, bell peppers, onions, and garlic to the pot.
- Stir in the soy sauce, sesame oil, ginger powder, and turmeric powder.
- Bring the soup to a boil, then reduce the heat and let it simmer for 10 minutes.
- While the soup is simmering, cook the noodles according to the package instructions.
- Once the noodles are cooked, drain them and set aside.
- Taste the soup and season with salt and pepper as needed.
- To serve, divide the noodles among bowls and ladle the soup over them.
- Garnish with fresh herbs or chopped green onions, if desired.
