Ingredients

  • 1 cup basmati rice
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon cayenne pepper
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 1 cup frozen peas
  • 1/2 cup plain yogurt
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper, to taste

Instructions

  • Cook rice according to package directions.
  • Meanwhile, in a large skillet, heat oil over medium heat. Add onion; cook and stir until tender, 4-6 minutes. Add garlic and ginger; cook 1 minute longer.
  • Stir in cumin, coriander, turmeric and cayenne; cook 1 minute longer.
  • Stir in tomatoes, chickpeas and peas; bring to a boil. Reduce heat; simmer, uncovered, until heated through, 5-7 minutes.
  • Stir in yogurt and cilantro; heat through (do not boil). Serve with rice.
