Ingredients
- 1 cup basmati rice
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1/2 teaspoon cayenne pepper
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 can (15 ounces) chickpeas, rinsed and drained
- 1 cup frozen peas
- 1/2 cup plain yogurt
- 1/4 cup chopped fresh cilantro
- Salt and pepper, to taste
Instructions
- Cook rice according to package directions.
- Meanwhile, in a large skillet, heat oil over medium heat. Add onion; cook and stir until tender, 4-6 minutes. Add garlic and ginger; cook 1 minute longer.
- Stir in cumin, coriander, turmeric and cayenne; cook 1 minute longer.
- Stir in tomatoes, chickpeas and peas; bring to a boil. Reduce heat; simmer, uncovered, until heated through, 5-7 minutes.
- Stir in yogurt and cilantro; heat through (do not boil). Serve with rice.
