Ingredients

  • 1 cup basmati rice
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon cayenne pepper
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 1 cup frozen peas
  • 1/2 cup unsweetened coconut yogurt
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper, to taste

Directions

    Cook the basmati rice according to package directions and set aside.

    Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and sauté until tender, about 5 minutes.

    Stir in the minced garlic and grated ginger, cooking for another minute.

    Add the cumin, coriander, turmeric, and cayenne pepper, stirring for another minute until fragrant.
