Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 zucchini, chopped
- 1 yellow squash, chopped
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
Instructions
- In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes, or until the quinoa is tender and the liquid has been absorbed.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook for 2-3 minutes, or until softened.
- Add the bell peppers, zucchini, and yellow squash to the skillet and cook for 5-7 minutes, or until the vegetables are tender.
- Stir in the black beans, corn, cumin, chili powder, salt, and black pepper. Cook for 2-3 minutes, or until heated through.
- Add the cooked quinoa to the skillet and stir to combine. Cook for 2-3 minutes, or until everything is heated through.
- Remove from heat and stir in the cilantro and lime juice.
