Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, chopped
  • 1 yellow squash, chopped
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime

Instructions

  • Rinse quinoa in a fine mesh strainer and drain well.
  • In a medium saucepan, bring vegetable broth to a boil.
  • Add quinoa and stir to combine.
  • Reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is tender and liquid is absorbed.
  • In a large skillet, heat olive oil over medium heat.
  • Add onion and garlic and cook until onion is translucent, about 5 minutes.
  • Add bell peppers, zucchini, and yellow squash and cook until vegetables are tender, about 10 minutes.
  • Add black beans, corn, cumin, chili powder, paprika, cayenne pepper, salt, and pepper and stir to combine.
  • Add cooked quinoa to the skillet and stir to combine.
  • Add cilantro and lime juice and stir to combine.
  • Serve hot and enjoy!
