- 1 cup cooked quinoa
- 1 cup cooked lentils
- 1/2 cup grated carrots
- 1/2 cup grated zucchini
- 1/2 cup chopped onion
- 1/2 cup chopped mushrooms
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 1/4 cup bread crumbs
- 1/4 cup all-purpose flour
- 1 egg
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cumin
- 1/2 tsp coriander
- 1/4 tsp cayenne pepper
- 2 tbsp olive oil
Instructions
- In a large bowl, combine the quinoa, lentils, carrots, zucchini, onion, mushrooms, parsley, cilantro, bread crumbs, flour, egg, salt, black pepper, cumin, coriander, and cayenne pepper.
- Mix well until all ingredients are evenly distributed.
- Form the mixture into 8-10 patties, about 1/2 inch thick.
- Heat the olive oil in a large skillet over medium heat.
- Add the patties to the skillet and cook for 3-4 minutes on each side, or until golden brown and crispy.
- Serve hot with your favorite dipping sauce or toppings.
