Ingredients

  • 1 cup cooked quinoa
  • 1 cup cooked lentils
  • 1/2 cup grated carrots
  • 1/2 cup grated zucchini
  • 1/2 cup chopped onion
  • 1/2 cup chopped mushrooms
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup bread crumbs
  • 1/4 cup all-purpose flour
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/4 tsp cayenne pepper
  • 2 tbsp olive oil

Instructions

  • In a large bowl, combine the quinoa, lentils, carrots, zucchini, onion, mushrooms, parsley, cilantro, bread crumbs, flour, egg, salt, black pepper, cumin, coriander, and cayenne pepper.
