Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 1 can of black beans, drained and rinsed
  • 1 can of corn, drained
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 tablespoon of olive oil
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of paprika
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 4 cups of vegetable broth
  • 1 cup of heavy cream
  • 1/4 cup of chopped fresh cilantro

Instructions

  • In a large pot, heat the olive oil over medium heat.
  • Add the onion and garlic, and sauté until the onion is translucent.
  • Add the red and green bell peppers, and sauté for another 2-3 minutes.
  • Add the chickpeas, black beans, corn, cumin, chili powder, paprika, salt, and black pepper, and stir to combine.
  • Add the vegetable broth, and bring the mixture to a boil.
  • Reduce the heat to low, and simmer for 20-25 minutes.
  • Stir in the heavy cream and cilantro, and cook for another 5 minutes.
  • Serve hot, and enjoy!
