Ingredients
- 1 cup cooked quinoa
- 1 cup cooked black beans
- 1/2 cup breadcrumbs
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 1/4 cup diced mushrooms
- 1/4 cup grated carrot
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 4 burger buns
- Lettuce, tomato, and other desired toppings
Instructions
- In a large bowl, mash the black beans with a fork or potato masher.
- Add the cooked quinoa, breadcrumbs, diced onion, diced bell pepper, diced mushrooms, grated carrot, minced garlic, cumin, paprika, salt, black pepper, cayenne pepper, chopped parsley, and chopped cilantro to the bowl.
- Mix everything together until well combined.
- Form the mixture into patties, about 1/2 inch thick.
- Heat a non-stick skillet over medium heat and add a drizzle of oil.
- Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
- Toast the burger buns if desired.
- Assemble the burgers by placing a patty on each bun and topping with lettuce, tomato, and any other desired toppings.
- Serve hot and enjoy!
