Ingredients
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 zucchini, diced
- 1 yellow squash, diced
- 1 bell pepper, diced
- 1 can of diced tomatoes
- 4 cups of vegetable broth
- 1 teaspoon of dried thyme
- 1 teaspoon of dried oregano
- Salt and pepper to taste
Instructions
- In a large pot, heat some olive oil over medium heat.
- Add the diced onion, carrots, celery, and garlic to the pot. Cook until the vegetables are tender.
- Add the diced zucchini, yellow squash, and bell pepper to the pot. Cook for another 5 minutes.
- Pour in the can of diced tomatoes and vegetable broth. Stir in the dried thyme and oregano.
- Season with salt and pepper to taste.
- Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.
- Serve hot and enjoy!
