Ingredients

  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 zucchini, diced
  • 1 yellow squash, diced
  • 1 bell pepper, diced
  • 1 can of diced tomatoes
  • 4 cups of vegetable broth
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste

Instructions

  • In a large pot, heat some olive oil over medium heat.
  • Add the diced onion, carrots, celery, and garlic to the pot. Cook until the vegetables are tender.
  • Add the diced zucchini, yellow squash, and bell pepper to the pot. Cook for another 5 minutes.
  • Pour in the can of diced tomatoes and vegetable broth. Stir in the dried thyme and oregano.
  • Season with salt and pepper to taste.
  • Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.
  • Serve hot and enjoy!
