Ingredients
- 8 oz whole wheat pasta
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 1 yellow squash, chopped
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 1/4 cup grated Parmesan cheese
Instructions
- Cook pasta according to package directions.
- While pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add onion and garlic and sauté for 2-3 minutes, until onion is translucent.
- Add red bell pepper, zucchini, and yellow squash and sauté for 5-7 minutes, until vegetables are tender.
- Add cherry tomatoes and cook for an additional 2-3 minutes, until tomatoes are heated through.
- Drain pasta and add it to the skillet with the vegetables.
- Add basil and Parmesan cheese and toss to combine.
