Ingredients
- 6 cups water
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 potato, chopped
- 1 tomato, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1 bay leaf
Instructions
- In a large pot, bring the water to a boil.
- Add the onion, carrots, celery, potato, tomato, salt, pepper, thyme, oregano, and bay leaf.
- Reduce the heat to low and simmer for 30 minutes, or until the vegetables are tender.
- Remove the bay leaf and discard.
- Using an immersion blender, blend the soup until smooth.
- Serve hot and enjoy!
