Ingredients

  • 6 cups water
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 potato, chopped
  • 1 tomato, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1 bay leaf

Instructions

  • In a large pot, bring the water to a boil.
  • Add the onion, carrots, celery, potato, tomato, salt, pepper, thyme, oregano, and bay leaf.
  • Reduce the heat to low and simmer for 30 minutes, or until the vegetables are tender.
  • Remove the bay leaf and discard.
  • Using an immersion blender, blend the soup until smooth.
