  • 2 cups vegetable broth
  • 1 stalk lemongrass, bruised
  • 3 kaffir lime leaves
  • 2 slices galangal or ginger
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 red chili pepper, sliced
  • 1 cup mushrooms, sliced
  • 1 tomato, cut into wedges
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • Salt to taste
  • Fresh cilantro, for garnish

Instructions

  • In a large pot, bring the vegetable broth to a boil.
  • Add the lemongrass, kaffir lime leaves, and galangal or ginger. Simmer for 10 minutes to infuse the broth with flavors.
  • Add the onion, garlic, chili pepper, mushrooms, and tomato. Cook for another 5 minutes until the vegetables are tender.

  • Remove the lemongrass, kaffir lime leaves, and galangal or ginger from the soup.
