- 2 cups vegetable broth
- 1 stalk lemongrass, bruised
- 3 kaffir lime leaves
- 2 slices galangal or ginger
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1 red chili pepper, sliced
- 1 cup mushrooms, sliced
- 1 tomato, cut into wedges
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 teaspoon sugar
- Salt to taste
- Fresh cilantro, for garnish
Instructions
- In a large pot, bring the vegetable broth to a boil.
- Add the lemongrass, kaffir lime leaves, and galangal or ginger. Simmer for 10 minutes to infuse the broth with flavors.
- Add the onion, garlic, chili pepper, mushrooms, and tomato. Cook for another 5 minutes until the vegetables are tender.
- Stir in the soy sauce, lime juice, sugar, and salt. Taste and adjust the seasonings as needed.
- Remove the lemongrass, kaffir lime leaves, and galangal or ginger from the soup.
