Ingredients

  • 1 block (14 oz) of extra-firm tofu, pressed
  • 4 medium potatoes, cubed
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 tablespoon of olive oil
  • 1 teaspoon of paprika
  • 1 teaspoon of cumin
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 2 tablespoons of apple cider vinegar

Directions

    Preheat the oven to 400°F (200°C).

    In a bowl, mix apple cider vinegar, paprika, cumin, salt, and black pepper with the cubed tofu, and let it marinate for 15 minutes.
