Ingredients
- 1 cup of tofu, cubed
- 1 cup of broccoli florets
- 1 cup of bell peppers, sliced
- 1 cup of carrots, julienned
- 1 cup of snap peas
- 1/2 cup of coconut milk
- 2 tablespoons of soy sauce
- 2 tablespoons of red curry paste
- 1 tablespoon of coconut oil
- 1 tablespoon of fresh ginger, minced
- 2 cloves of garlic, minced
- 1 tablespoon of lime juice
- 1 tablespoon of brown sugar
- 1/4 cup of fresh cilantro, chopped
- 1/4 cup of roasted peanuts, chopped
Instructions
- In a large pan, heat the coconut oil over medium heat.
- Add the tofu and cook until golden brown, about 5 minutes. Remove from the pan and set aside.
- In the same pan, add the ginger and garlic. Cook for 1 minute until fragrant.
- Add the bell peppers, carrots, and snap peas. Cook for 5 minutes until the vegetables are tender-crisp.
- In a small bowl, whisk together the coconut milk, soy sauce, red curry paste, lime juice, and brown sugar.
- Pour the sauce into the pan with the vegetables. Stir to coat the vegetables evenly.
- Add the tofu back into the pan and cook for an additional 2 minutes to heat through.
- Serve the vegan Thai delight over steamed rice or noodles.
- Garnish with fresh cilantro and chopped peanuts before serving.
