Ingredients

  • 1 cup of tofu, cubed
  • 1 cup of broccoli florets
  • 1 cup of bell peppers, sliced
  • 1 cup of carrots, julienned
  • 1 cup of snap peas
  • 1/2 cup of coconut milk
  • 2 tablespoons of soy sauce
  • 2 tablespoons of red curry paste
  • 1 tablespoon of coconut oil
  • 1 tablespoon of fresh ginger, minced
  • 2 cloves of garlic, minced
  • 1 tablespoon of lime juice
  • 1 tablespoon of brown sugar
  • 1/4 cup of fresh cilantro, chopped
  • 1/4 cup of roasted peanuts, chopped

Instructions

  • In a large pan, heat the coconut oil over medium heat.
  • Add the tofu and cook until golden brown, about 5 minutes. Remove from the pan and set aside.
  • In the same pan, add the ginger and garlic. Cook for 1 minute until fragrant.
  • Add the bell peppers, carrots, and snap peas. Cook for 5 minutes until the vegetables are tender-crisp.
  • In a small bowl, whisk together the coconut milk, soy sauce, red curry paste, lime juice, and brown sugar.
  • Pour the sauce into the pan with the vegetables. Stir to coat the vegetables evenly.
  • Add the tofu back into the pan and cook for an additional 2 minutes to heat through.
  • Serve the vegan Thai delight over steamed rice or noodles.
  • Garnish with fresh cilantro and chopped peanuts before serving.
