Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1 cup chopped mushrooms
  • 1 tablespoon fresh tarragon, chopped
  • Salt and pepper to taste

Instructions

  • 1. Rinse quinoa and place in a pot with vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until quinoa is cooked.
  • 2. While quinoa is cooking, heat olive oil in a large skillet over medium heat. Add onion and garlic and sauté for 2-3 minutes, or until onion is translucent.
  • 3. Add red bell pepper, zucchini, and mushrooms to the skillet. Sauté for 5-7 minutes, or until vegetables are tender.
  • 4. Add cooked quinoa and fresh tarragon to the skillet. Stir to combine and heat through.
  • 5. Season with salt and pepper to taste.
