Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 1 cup chopped mushrooms
- 1 tablespoon fresh tarragon, chopped
- Salt and pepper to taste
Instructions
- 1. Rinse quinoa and place in a pot with vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until quinoa is cooked.
- 2. While quinoa is cooking, heat olive oil in a large skillet over medium heat. Add onion and garlic and sauté for 2-3 minutes, or until onion is translucent.
- 3. Add red bell pepper, zucchini, and mushrooms to the skillet. Sauté for 5-7 minutes, or until vegetables are tender.
- 4. Add cooked quinoa and fresh tarragon to the skillet. Stir to combine and heat through.
- 5. Season with salt and pepper to taste.
- 6. Serve hot and enjoy!
