Ingredients

  • 1 can of black beans, drained and rinsed
  • 1 cup of corn kernels
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 1 avocado, diced
  • 1 tomato, diced
  • 1/4 cup of chopped cilantro
  • 1 tsp of cumin
  • 1 tsp of chili powder
  • 1/2 tsp of garlic powder
  • 1/4 tsp of salt
  • 1/4 tsp of black pepper
  • 8 small corn tortillas
  • Lime wedges, for serving

Instructions

  • In a large skillet, heat some oil over medium heat.
  • Add the red bell pepper and red onion, and cook until softened.
  • Add the black beans, corn, cumin, chili powder, garlic powder, salt, and pepper. Cook for another 5 minutes.
  • Heat the corn tortillas in a separate skillet until warm and pliable.
  • Fill each tortilla with the bean and vegetable mixture.
  • Top with avocado, tomato, and cilantro.
  • Squeeze some lime juice over the top before serving.
