Ingredients
- 1 can of black beans, drained and rinsed
- 1 cup of corn kernels
- 1 red bell pepper, diced
- 1 small red onion, diced
- 1 avocado, diced
- 1 tomato, diced
- 1/4 cup of chopped cilantro
- 1 tsp of cumin
- 1 tsp of chili powder
- 1/2 tsp of garlic powder
- 1/4 tsp of salt
- 1/4 tsp of black pepper
- 8 small corn tortillas
- Lime wedges, for serving
Instructions
- In a large skillet, heat some oil over medium heat.
- Add the red bell pepper and red onion, and cook until softened.
- Add the black beans, corn, cumin, chili powder, garlic powder, salt, and pepper. Cook for another 5 minutes.
- Heat the corn tortillas in a separate skillet until warm and pliable.
- Fill each tortilla with the bean and vegetable mixture.
- Top with avocado, tomato, and cilantro.
- Squeeze some lime juice over the top before serving.
