Ingredients

  • 1 large sweet potato
  • 1 tablespoon coconut oil
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon maple syrup
  • 1/4 cup almond milk
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup dried fruit (optional)

Instructions

  • 1. Preheat your oven to 400°F (200°C).
  • 2. Wash the sweet potato thoroughly and poke a few holes in it with a fork.
  • 3. Place the sweet potato on a baking sheet and bake for 45-60 minutes, or until it is soft and cooked through.
