Ingredients
- 1 large sweet potato
- 1 tablespoon coconut oil
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon vanilla extract
- 1 tablespoon maple syrup
- 1/4 cup almond milk
- 1/4 cup chopped nuts (optional)
- 1/4 cup dried fruit (optional)
Instructions
- 1. Preheat your oven to 400°F (200°C).
- 2. Wash the sweet potato thoroughly and poke a few holes in it with a fork.
- 3. Place the sweet potato on a baking sheet and bake for 45-60 minutes, or until it is soft and cooked through.
- 4. Remove the sweet potato from the oven and let it cool for a few minutes.
- 5. Once the sweet potato is cool enough to handle, peel off the skin and place the flesh in a bowl.
- 6. Add the coconut oil, cinnamon, nutmeg, vanilla extract, maple syrup, and almond milk to the bowl with the sweet potato flesh.
