- 1 cup quinoa
- 2 cups water
- 1/2 cup almond milk
- 1 tbsp maple syrup
- 1/2 tsp vanilla extract
- 1/4 tsp cinnamon
- 1 banana, sliced
- 1/2 cup blueberries
- 1/2 cup raspberries
- 1/4 cup chopped walnuts
- 1 tbsp chia seeds
- 1 tbsp hemp seeds
Instructions
- In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until quinoa is tender and water is absorbed.
- In a small bowl, whisk together almond milk, maple syrup, vanilla extract, and cinnamon.
- Divide cooked quinoa between two bowls. Top with sliced banana, blueberries, raspberries, chopped walnuts, chia seeds, and hemp seeds.
- Drizzle almond milk mixture over each bowl and serve immediately.
