Ingredients
- 1 block of firm tofu
- 1 red bell pepper, diced
- 1 small onion, diced
- 1 clove of garlic, minced
- 1/2 tsp turmeric
- 1/2 tsp paprika
- 1/4 tsp cumin
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 1/4 cup nutritional yeast
- 1/4 cup chopped fresh parsley
Instructions
- 1. Drain the tofu and crumble it into a bowl.
- 2. In a large skillet, heat the olive oil over medium heat.
- 3. Add the onion and garlic and sauté for 2-3 minutes, until softened.
- 4. Add the red bell pepper and sauté for another 2-3 minutes.
- 5. Add the crumbled tofu to the skillet and stir to combine with the vegetables.
- 6. Add the turmeric, paprika, cumin, salt, and black pepper to the skillet and stir to coat the tofu and vegetables.
- 7. Cook for 5-7 minutes, stirring occasionally, until the tofu is heated through and lightly browned.
- 8. Remove the skillet from the heat and stir in the nutritional yeast and chopped parsley.
- 9. Serve hot, garnished with additional parsley if desired.
