Ingredients

  • 1 block of firm tofu
  • 1 red bell pepper, diced
  • 1 small onion, diced
  • 1 clove of garlic, minced
  • 1/2 tsp turmeric
  • 1/2 tsp paprika
  • 1/4 tsp cumin
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/4 cup nutritional yeast
  • 1/4 cup chopped fresh parsley

Instructions

  • 1. Drain the tofu and crumble it into a bowl.
  • 2. In a large skillet, heat the olive oil over medium heat.
  • 3. Add the onion and garlic and sauté for 2-3 minutes, until softened.
  • 4. Add the red bell pepper and sauté for another 2-3 minutes.
  • 5. Add the crumbled tofu to the skillet and stir to combine with the vegetables.
  • 6. Add the turmeric, paprika, cumin, salt, and black pepper to the skillet and stir to coat the tofu and vegetables.
  • 7. Cook for 5-7 minutes, stirring occasionally, until the tofu is heated through and lightly browned.
  • 8. Remove the skillet from the heat and stir in the nutritional yeast and chopped parsley.
  • 9. Serve hot, garnished with additional parsley if desired.
