Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 cup sliced mushrooms
- 1 cup snow peas
- 1/4 cup soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon brown sugar
- 1 teaspoon ground ginger
- 1/4 teaspoon red pepper flakes
- 1/4 cup chopped fresh cilantro
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the onion and garlic and cook until softened, about 3 minutes.
- Add the bell peppers, broccoli, mushrooms, and snow peas and cook until tender, about 5 minutes.
- In a small bowl, whisk together the soy sauce, cornstarch, brown sugar, ginger, and red pepper flakes.
- Pour the sauce over the vegetables and stir to coat.
- Cook for an additional 2-3 minutes, until the sauce has thickened.
- Remove from heat and stir in the cilantro.
- Serve hot over rice or noodles.
