- 1 cup vital wheat gluten
- 1/4 cup nutritional yeast

- In a large mixing bowl, combine the vital wheat gluten, nutritional yeast, garlic powder, onion powder, smoked paprika, dried thyme, dried rosemary, salt, and black pepper.
- In a separate bowl, whisk together the vegetable broth, soy sauce, tomato paste, and olive oil.
- Pour the wet ingredients into the dry ingredients and stir until well combined.
- Knead the dough for about 5 minutes, until it becomes elastic and slightly sticky.
- Shape the dough into a log and wrap it tightly in aluminum foil.
- Place the wrapped seitan log in a steamer basket and steam for 1 hour.
