Instructions

  • In a large mixing bowl, combine the vital wheat gluten, nutritional yeast, garlic powder, onion powder, paprika, dried thyme, dried rosemary, dried sage, salt, and black pepper.
  • In a separate bowl, whisk together the vegetable broth, soy sauce, olive oil, and tomato paste.
  • Pour the wet ingredients into the dry ingredients and stir until a dough forms.
  • Knead the dough for about 5 minutes, until it becomes elastic and slightly sticky.
  • Divide the dough into small pieces and shape them into chicken-like pieces.
  • In a large pot, bring water to a boil. Add the seitan pieces and simmer for 1 hour.
  • Remove the seitan from the pot and let it cool.
  • Once cooled, the seitan can be used in various recipes or stored in the refrigerator for up to a week.
