Ingredients
- 1 package of vegan shrimp
- 1 can of hearts of palm
- 1 can of artichoke hearts
- 1 red bell pepper
- 1 yellow onion
- 2 cloves of garlic
- 1 tablespoon of olive oil
- 1 teaspoon of Old Bay seasoning
- 1/4 teaspoon of smoked paprika
- 1/4 teaspoon of cayenne pepper
- Salt and pepper to taste
Instructions
- 1. Preheat the oven to 375°F.
- 2. Drain and rinse the hearts of palm and artichoke hearts, and cut them into bite-sized pieces.
- 3. Cut the red bell pepper and yellow onion into bite-sized pieces.
- 4. Mince the garlic.
- 5. In a large bowl, mix together the hearts of palm, artichoke hearts, red bell pepper, yellow onion, and garlic.
- 6. Add the olive oil, Old Bay seasoning, smoked paprika, cayenne pepper, salt, and pepper to the bowl, and mix well.
- 7. Spread the mixture evenly on a baking sheet, and bake for 20-25 minutes, or until the vegetables are tender and slightly browned.
- 8. While the vegetables are baking, prepare the vegan shrimp according to the package instructions.
- 9. Once the vegetables are done, remove them from the oven and mix in the cooked vegan shrimp.
