This vibrant vegan quinoa and vegetable stir-fry offers a deliciously healthy meal that is bursting with flavors and nutrients. Easy to prepare, it's a perfect choice for a busy weeknight dinner, offering plant-based protein and fiber in every bite.

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 tablespoon sesame oil or olive oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 zucchini, sliced into half-moons
  • 1 cup broccoli florets
  • 1/4 cup soy sauce or tamari
  • 1 tablespoon cornstarch
  • 1 teaspoon fresh ginger, grated
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup cilantro, chopped

Directions

  1. 1

Rinse the quinoa under cold water. In a medium saucepan, combine quinoa and water. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed.

  2. 2

In a large skillet or wok, heat oil over medium-high heat. Add onion and garlic, stirring for 2-3 minutes until fragrant.

  3. 3

Add red bell pepper, zucchini, and broccoli. Stir fry the vegetables for 5-7 minutes until tender-crisp.

  4. 4

In a small bowl, whisk together soy sauce, cornstarch, ginger, and red pepper flakes.

  5. 5

Pour the sauce over the vegetables and stir well to coat.

  6. 6

Add cooked quinoa to the skillet. Stir to combine and cook for an additional 2-3 minutes until heated through.

  7. 7

Garnish with chopped cilantro and serve immediately.

Chef's tip

Ensure quinoa is cooked properly by rinsing it well and simmering on low heat to avoid a bitter taste. Customize with additional veggies or garnishes like sesame seeds or green onions.
