- 1 cup quinoa
- 2 cups water
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 zucchini, chopped
- 1 cup broccoli florets
- 1/4 cup soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon honey
- 1 teaspoon ginger, grated
- 1/4 teaspoon red pepper flakes
- 1/4 cup chopped cilantro
Instructions
- In a medium saucepan, bring the quinoa and water to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is tender and the water is absorbed.
- In a large skillet or wok, heat the olive oil over medium-high heat. Add the onion and garlic and sauté for 2-3 minutes, or until the onion is translucent.
- Add the bell peppers, zucchini, and broccoli to the skillet and sauté for 5-7 minutes, or until the vegetables are tender.
- In a small bowl, whisk together the soy sauce, cornstarch, honey, ginger, and red pepper flakes. Pour the sauce over the vegetables and stir to coat.
- Add the cooked quinoa to the skillet and stir to combine. Cook for an additional 2-3 minutes, or until the quinoa is heated through.
- Garnish with chopped cilantro and serve hot.
