Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced
  • Salt and pepper, to taste

Instructions

  • Rinse the quinoa in a fine mesh strainer and add it to a medium saucepan with the water. Bring to a boil, then reduce the heat to low and cover. Cook for 15-20 minutes, or until the water is absorbed and the quinoa is tender.
  • In a large bowl, combine the cooked quinoa, black beans, red bell pepper, avocado, cilantro, lime juice, salt, and pepper. Mix well.
  • Divide the mixture into bowls and serve immediately.
