About this recipe

These Vegan Power Burgers are a delightful combination of wholesome ingredients, providing a protein-packed and flavorful alternative to traditional burgers. Perfect for a nutritious meal, they are easy to prepare and can be customized with your favorite toppings for a satisfying vegan experience.

Ingredients

  • 1 can (15 ounces) black beans, drained and rinsed
  • 1/2 cup cooked quinoa
  • 1/2 cup rolled oats
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 1/4 cup finely chopped mushrooms
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground cumin
  • Salt and pepper to taste
  • 4 whole wheat burger buns
  • Toppings of your choice (lettuce, tomato, avocado, etc.)

Directions

  1. 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. 2

In a large bowl, mash the black beans with a fork or potato masher until mostly smooth.

  3. 3

Add the quinoa, oats, onion, bell pepper, mushrooms, soy sauce, smoked paprika, garlic powder, cumin, salt, and pepper. Mix until well combined.

  4. 4

Divide the mixture into 4 equal portions and shape each into a patty. Place on the prepared baking sheet.

  5. 5

Bake for 20-25 minutes, flipping halfway through, until the patties are firm and lightly browned.

  6. 6

Toast the burger buns and assemble the burgers with your desired toppings.

Chef's tip

For a spicier kick, consider adding a pinch of cayenne pepper to the patty mixture. Experiment with various toppings like caramelized onions or vegan cheese for extra flavor.
