Ingredients
- 8 oz rice noodles
- 2 tbsp sesame oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1 cup broccoli florets
- 1 cup snap peas
- 1/4 cup soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp rice vinegar
- 1 tbsp maple syrup
- 1 tsp sriracha sauce
- 1/4 cup chopped peanuts
- 2 green onions, sliced
Instructions
- Cook the rice noodles according to package instructions. Drain and set aside.
- Heat the sesame oil in a large skillet or wok over medium heat.
- Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
- Add the bell pepper, carrot, broccoli, and snap peas to the skillet. Cook for another 5 minutes, or until the vegetables are tender-crisp.
- In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, maple syrup, and sriracha sauce.
- Pour the sauce over the vegetables in the skillet and stir to coat.
- Add the cooked rice noodles to the skillet and toss to combine with the vegetables and sauce.
- Cook for an additional 2-3 minutes, or until everything is heated through.
- Remove from heat and garnish with chopped peanuts and sliced green onions.
- Serve hot and enjoy!
