Ingredients

  • 8 oz rice noodles
  • 2 tbsp sesame oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1/4 cup soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tbsp maple syrup
  • 1 tsp sriracha sauce
  • 1/4 cup chopped peanuts
  • 2 green onions, sliced

Instructions

  • Cook the rice noodles according to package instructions. Drain and set aside.
  • Heat the sesame oil in a large skillet or wok over medium heat.
  • Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
  • Add the bell pepper, carrot, broccoli, and snap peas to the skillet. Cook for another 5 minutes, or until the vegetables are tender-crisp.
  • In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, maple syrup, and sriracha sauce.
  • Pour the sauce over the vegetables in the skillet and stir to coat.
  • Add the cooked rice noodles to the skillet and toss to combine with the vegetables and sauce.
  • Cook for an additional 2-3 minutes, or until everything is heated through.
  • Remove from heat and garnish with chopped peanuts and sliced green onions.
  • Serve hot and enjoy!
