Ingredients

  • 1 cup cooked quinoa
  • 1 cup cooked black beans
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped mushrooms
  • 1/4 cup ground flaxseed
  • 2 tablespoons soy sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup breadcrumbs
  • 4 whole wheat burger buns
  • Toppings of your choice (lettuce, tomato, onion, etc.)

Instructions

  • In a large bowl, mash the black beans with a fork or potato masher until they are mostly mashed but still have some texture.
  • Add the cooked quinoa, chopped onion, chopped mushrooms, ground flaxseed, soy sauce, smoked paprika, garlic powder, onion powder, black pepper, and salt to the bowl with the mashed black beans. Mix well to combine.
  • Add the breadcrumbs to the mixture and stir until everything is evenly combined.
  • Divide the mixture into 4 equal portions and shape each portion into a patty.
  • Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or oil.
  • Cook the patties for about 4-5 minutes on each side, or until they are golden brown and heated through.
  • Toast the burger buns if desired.
  • Assemble the burgers by placing a patty on each bun and adding your desired toppings.
  • Serve the vegan meat burgers with a side of fries or a salad for a complete meal.
