- For the crust:
- - 1 1/2 cups graham cracker crumbs
- - 1/4 cup vegan butter, melted
- - 1/4 cup granulated sugar
- For the filling:
- - 2 cups raw cashews, soaked overnight
- - 1/2 cup coconut cream
- - 1/2 cup lime juice
- - 1/2 cup maple syrup
- - 1/2 cup melted coconut oil
- - 1 tsp vanilla extract
- - Zest of 1 lime
- - Pinch of salt
Instructions
- 1. Preheat the oven to 350°F.
- 2. In a bowl, mix together the graham cracker crumbs, melted vegan butter, and granulated sugar until well combined.
- 3. Press the mixture into the bottom of a 9-inch springform pan and bake for 10 minutes. Remove from the oven and let cool.
- 4. In a blender, combine the soaked cashews, coconut cream, lime juice, maple syrup, melted coconut oil, vanilla extract, lime zest, and salt. Blend until smooth and creamy.
- 5. Pour the filling over the cooled crust and smooth out the top with a spatula.
- 6. Chill the cheesecake in the refrigerator for at least 4 hours, or until set.
- 7. Once the cheesecake is set, remove it from the pan and slice into pieces.
