Ingredients

  • For the crust:
  • - 1 1/2 cups graham cracker crumbs
  • - 1/4 cup vegan butter, melted
  • - 1/4 cup granulated sugar
  • For the filling:
  • - 2 cups raw cashews, soaked overnight
  • - 1/2 cup coconut cream
  • - 1/2 cup lime juice
  • - 1/2 cup maple syrup
  • - 1/2 cup melted coconut oil
  • - 1 tsp vanilla extract
  • - Zest of 1 lime
  • - Pinch of salt

Instructions

  • 1. Preheat the oven to 350°F.
  • 2. In a bowl, mix together the graham cracker crumbs, melted vegan butter, and granulated sugar until well combined.
